Recipe yields one 3-layer 8” round cake
Preheat oven to 325F
Sift dry ingredients and set aside.
Whip room temperature egg whites to medium peaks and set aside.
Cream butter and sugar. Add yolks one at a time. Add vanilla.
Combine buttermilk and vinegar in a separate bowl. Add to mixture alternately with dry ingredients. Gently fold in whipped egg whites.
Portion into three 8” round cake pans that are sprayed in non-stick vegetable spray and lined with parchment paper.
Bake for 25-35 minutes, or until cake bounces back when touched.
